Ingredients
Crust
0.33cupsliced almonds
1.75cupsall-purpose flour
0.25teaspoonbaking powder
0.75cupunsalted butter softened to 65 to 67ºF 18 to 19ºC
0.5cupgranulated sugar
0.25teaspoonkosher salt
1largeegg room temperature
1teaspoonvanilla extract
Filling
6largeeggs room temperature
1tablespoonlemon zest
1cuplemon juice about 4 to 5 lemons
3cupsgranulated sugar
1cupall-purpose flour
Dusting
as neededpowdered sugar(for dusting)
Instructions
Preheat oven to 350°F (175°C). Prepare crust by mixing almonds, flour, baking powder, butter, sugar, salt, egg, and vanilla. Press into baking pan and bake for 15 minutes.
Mix eggs, lemon zest, lemon juice, sugar, and flour to make the filling. Pour over baked crust.
Bake for an additional 15 minutes until filling is set.
Allow to cool, then dust with powdered sugar before serving.
