Delight in these tangy and sweet lemon bars with a buttery crust and zesty lemon filling.

Ingredients

Crust

  • 0.33 cup sliced almonds
  • 1.75 cups all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.75 cup unsalted butter softened to 65 to 67ºF 18 to 19ºC
  • 0.5 cup granulated sugar
  • 0.25 teaspoon kosher salt
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract

Filling

  • 6 large eggs room temperature
  • 1 tablespoon lemon zest
  • 1 cup lemon juice about 4 to 5 lemons
  • 3 cups granulated sugar
  • 1 cup all-purpose flour

Dusting

  • as needed powdered sugar (for dusting)

Instructions 

  • Preheat oven to 350°F (175°C). Prepare crust by mixing almonds, flour, baking powder, butter, sugar, salt, egg, and vanilla. Press into baking pan and bake for 15 minutes.
  • Mix eggs, lemon zest, lemon juice, sugar, and flour to make the filling. Pour over baked crust.
  • Bake for an additional 15 minutes until filling is set.
  • Allow to cool, then dust with powdered sugar before serving.

Notes

Use fresh lemons for the best flavor and ensure the filling is fully set before serving.
