Ingredients

Broth

  • 4 cups Vegetable Broth (Low-sodium for less salt)

Chicken

  • 2 cups Rotisserie Chicken (Shredded)

Mushrooms

  • 8 ounces Fresh Mushrooms (Button or cremini)

Onion

  • 1 medium Onion (Chopped)

Garlic

  • 3 cloves Garlic (Minced)

Cream

  • 1 cup Heavy cream or half-and-half

Thyme

  • 1 teaspoon Thyme (Fresh or dried)

Salt

  • to taste Salt (Adjust to taste)

Pepper

  • to taste Pepper (Adjust to taste)

Olive Oil

  • 2 tablespoons Olive Oil (For sautéing)

Instructions 

  • Heat olive oil in a large pot and sauté chopped onion and minced garlic until fragrant.
  • Add sliced mushrooms and cook until tender.
  • Pour in vegetable broth and bring to a simmer.
  • Add shredded chicken, thyme, salt, and pepper; cook for 5 minutes.
