Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a small bowl, whisk together flour, baking soda, baking powder, and salt.
In a medium bowl, cream oil, sugars, until well combined. Add coconut extract, vanilla, and egg; mix briefly.
Gradually add dry ingredients to wet, mixing until fully incorporated. Fold in coconut and chocolates by hand.
Scoop dough onto baking sheet, 1.5 tbsp per cookie, 2 inches apart. Bake 10-13 minutes until golden. Cool on rack.
Notes
For softer cookies, slightly underbake and cool on the sheet for a few minutes.
