Delight in these chewy cookies packed with coconut and chocolate chips, perfect for a sweet treat.

Ingredients

Dry Ingredients

  • 1 cup all purpose flour
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1.5 tsp salt

Wet Ingredients

  • 0.25 cup vegetable oil or refined coconut oil
  • 0.25 cup granulated sugar
  • 0.25 cup light brown sugar
  • 0.5 tsp coconut extract
  • 0.5 tsp vanilla extract
  • 1 large egg

Add-ins

  • 0.5 cup sweetened flaked coconut
  • 0.5 cup semi-sweet or dark chocolate chips
  • 0.5 cup milk chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a small bowl, whisk together flour, baking soda, baking powder, and salt.
  • In a medium bowl, cream oil, sugars, until well combined. Add coconut extract, vanilla, and egg; mix briefly.
  • Gradually add dry ingredients to wet, mixing until fully incorporated. Fold in coconut and chocolates by hand.
  • Scoop dough onto baking sheet, 1.5 tbsp per cookie, 2 inches apart. Bake 10-13 minutes until golden. Cool on rack.

Notes

For softer cookies, slightly underbake and cool on the sheet for a few minutes.
