Instructions
Beat butter and sugars until light and fluffy, then add eggs and extracts, mixing well.
Whisk together flour, cornstarch, baking soda, and salt; gradually mix into wet ingredients.
Stir in 3 cups coconut flakes and caramel chips; chill dough for 30 minutes.
Preheat oven to 375°F (190°C); scoop dough onto parchment-lined sheets and bake 10-12 minutes.
Cool cookies completely; optionally dip in melted chocolate and sprinkle remaining coconut.
Notes
For best results, chill the dough before baking and ensure cookies are cooled before dipping in chocolate.
