Delight in these chewy, coconut-flavored cookies with optional chocolate dipping for a perfect treat.

Ingredients

Butter and Sugars

  • 1 cup butter (room temperature)
  • 1 cup brown sugar (tightly packed)
  • ½ cup sugar

Eggs and Extracts

  • 2 large eggs
  • 1 ½ teaspoon vanilla extract
  • ½ teaspoon coconut extract

Dry Ingredients

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons cornstarch (cornflour in UK)
  • 1 teaspoon baking soda
  • ¾ teaspoon salt

Coconut and Chips

  • 3 ½ cups unsweetened coconut flakes (divided)
  • 1 cup caramel baking chips
  • 10 oz dark chocolate melting wafers (optional)

Instructions 

  • Beat butter and sugars until light and fluffy, then add eggs and extracts, mixing well.
  • Whisk together flour, cornstarch, baking soda, and salt; gradually mix into wet ingredients.
  • Stir in 3 cups coconut flakes and caramel chips; chill dough for 30 minutes.
  • Preheat oven to 375°F (190°C); scoop dough onto parchment-lined sheets and bake 10-12 minutes.
  • Cool cookies completely; optionally dip in melted chocolate and sprinkle remaining coconut.

Notes

For best results, chill the dough before baking and ensure cookies are cooled before dipping in chocolate.
