A quick and flavorful dish featuring chilled noodles coated in a spicy peanut sauce, topped with scallions and sesame seeds.

Ingredients

Noodles

  • 200 g dry noodles (spaghetti, soba, or rice noodles)
  • 0.5 cup creamy natural peanut butter
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp chili garlic sauce
  • 1 tsp grated fresh ginger
  • 1 tsp grated fresh garlic
  • 2 scallions thinly sliced scallions
  • 1 tbsp toasted sesame seeds

Instructions 

  • Cook noodles according to package instructions until al dente, then rinse under cold water and drain.
  • Whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, chili garlic sauce, garlic, and ginger until smooth.
  • Add the cooled noodles to the sauce and toss to coat evenly.
  • Top with sliced scallions and toasted sesame seeds, then serve immediately or refrigerate.

Notes

Adjust seasoning to taste and serve immediately for best texture.
