Cold Yogurt Cucumber Soup - Tarator

A refreshing and easy-to-make Bulgarian-inspired cold soup perfect for hot days.

Ingredients

Vegetables

  • 1 large English cucumber (peeled and finely diced)
  • 1 clove garlic (pressed)
  • 2 tsp salt (or more to taste)
  • 2 Tbsp olive or sunflower oil (optional)
  • 2-3 Tbsp chopped fresh dill
  • 2 cups plain Greek yogurt (which is easier to find in the US)
  • 2 cups cold water
  • 2 Tbsp chopped walnuts (optional, I prefer not to add them)

Instructions 

  • Combine cucumber, garlic, salt, oil, and dill in a large bowl.
  • Add yogurt and stir to combine.
  • Gradually add cold water, mixing well until smooth and lump-free.
  • Adjust salt if needed, then refrigerate for at least 30 minutes.
  • Top with chopped walnuts if desired before serving.

Notes

This soup is best served chilled and can be customized with more herbs or garlic for extra flavor.
