A refreshing and easy-to-make Bulgarian-inspired cold soup perfect for hot days.
Ingredients
Vegetables

large
English cucumber
(peeled and finely diced)
1
clove
garlic
(pressed)

tsp
salt
(or more to taste)

Tbsp
olive or sunflower oil
(optional)
2-3
Tbsp
chopped fresh dill
2
cups
plain Greek yogurt
(which is easier to find in the US)

cold water

Tbsp
chopped walnuts
(optional, I prefer not to add them)
Instructions
Combine cucumber, garlic, salt, oil, and dill in a large bowl.
Add yogurt and stir to combine.
Gradually add cold water, mixing well until smooth and lump-free.
Adjust salt if needed, then refrigerate for at least 30 minutes.
Top with chopped walnuts if desired before serving.
Notes
This soup is best served chilled and can be customized with more herbs or garlic for extra flavor.
