A creamy, cheesy broccoli soup inspired by Panera, perfect for cozy days. Made with fresh vegetables and rich cheeses, it's easy to prepare at home.

Instructions
Heat oil or melt butter in a large pot over medium-low heat.
Add carrots, onions, broccoli, and stems; cook for 12-14 minutes, stirring occasionally. Add salt halfway through.
Add garlic; cook 1 minute. Stir in flour; cook 1 minute.
Gradually whisk in broth and half and half. Add mustard, sugar, hot sauce, paprika, turmeric; bring to boil, then simmer.
Add cheeses gradually, stirring until melted. Optional: whisk in cornstarch slurry and simmer until thickened. Adjust seasonings.
Notes
Stir frequently when adding cheese to prevent separation. For extra creaminess, blend part of the soup before serving.
