Crispy, flavorful baked chicken tenders coated with crunchy cornflakes, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 1 1/4 pounds chicken tenders or boneless, skinless chicken breasts (cut into strips)
  • 4 cups cornflakes
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional) (for heat)
  • as needed cooking spray

Instructions 

  • Preheat oven to 400°F. Prepare wire rack with cooking spray.
  • Crush cornflakes into coarse crumbs and place in a shallow dish.
  • Whisk eggs and milk in a separate dish. Mix flour with spices in another.
  • Set up breading station: flour, egg, then cornflakes. Season chicken.
  • Dip chicken in flour, then egg, then coat with cornflakes. Place on rack.
  • Spray chicken lightly with cooking spray and bake for 15-20 minutes until golden and cooked through.

Notes

Ensure chicken is fully cooked before serving. For extra crunch, press cornflakes firmly onto chicken.
