A quick, protein-packed salad combining chickpeas, cottage cheese, and fresh herbs for a refreshing meal.
Ingredients

(rinsed and drained)

cottage cheese
(full-fat or 2%)

red onion
(finely chopped)

celery
(finely chopped)

chopped fresh parsley

Dijon mustard

Instructions
In a bowl, mash half the chickpeas and leave the rest whole.
Whisk cottage cheese, Dijon mustard, and lemon juice together.
Add chopped onion, celery, and parsley to the chickpeas. Mix well.
Pour the cottage cheese mixture over the chickpeas and vegetables. Stir gently.
Season with salt and pepper. Chill for 15-30 minutes before serving.
Notes
This salad is best served chilled and can be customized with additional herbs or spices.
