A quick, protein-packed salad combining chickpeas, cottage cheese, and fresh herbs for a refreshing meal.

Ingredients

Canned Goods

  • 1 can chickpeas (rinsed and drained)
  • 1 cup cottage cheese (full-fat or 2%)
  • 0.25 cup red onion (finely chopped)
  • 0.25 cup celery (finely chopped)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • to taste Salt and black pepper

Instructions 

  • In a bowl, mash half the chickpeas and leave the rest whole.
  • Whisk cottage cheese, Dijon mustard, and lemon juice together.
  • Add chopped onion, celery, and parsley to the chickpeas. Mix well.
  • Pour the cottage cheese mixture over the chickpeas and vegetables. Stir gently.
  • Season with salt and pepper. Chill for 15-30 minutes before serving.

Notes

This salad is best served chilled and can be customized with additional herbs or spices.
