A quick and nutritious breakfast scramble combining eggs, cottage cheese, and fresh greens for a protein-packed start to your day.
Ingredients

cottage cheese

Instructions
Whisk eggs until smooth. Prepare cottage cheese, shred cheese, and wash spinach.
Heat a non-stick skillet over medium heat and add butter or oil.
Pour eggs into the pan; cook until edges set, then gently stir to form large curds.
When eggs are halfway cooked, fold in cottage cheese and spinach.
Cook for 1-2 more minutes, then top with shredded cheese and season with salt and pepper. Serve immediately.
Notes
For a creamier texture, blend cottage cheese before adding.
