A quick and nutritious breakfast scramble combining eggs, cottage cheese, and fresh greens for a protein-packed start to your day.

Ingredients

Eggs

  • 3 large eggs
  • 0.5 cup cottage cheese (any fat %)
  • 0.5 cup fresh spinach (or kale/arugula/herbs)
  • 0.25 cup shredded cheese (cheddar, mozzarella, or feta)
  • to taste Salt & freshly cracked black pepper
  • 0.5 tsp butter or olive oil (for cooking)
  • optional Optional toppings (avocado slices, cherry tomatoes, red pepper flakes, hot sauce)

Instructions 

  • Whisk eggs until smooth. Prepare cottage cheese, shred cheese, and wash spinach.
  • Heat a non-stick skillet over medium heat and add butter or oil.
  • Pour eggs into the pan; cook until edges set, then gently stir to form large curds.
  • When eggs are halfway cooked, fold in cottage cheese and spinach.
  • Cook for 1-2 more minutes, then top with shredded cheese and season with salt and pepper. Serve immediately.

Notes

For a creamier texture, blend cottage cheese before adding.
