Delight in these warm, cinnamon-spiced apple crumble bars with a buttery oat crust, perfect for cozy afternoons.
Ingredients
Crust and topping

old-fashioned rolled oats

unsalted butter, cold and cubed
(use vegan butter for dairy-free)

Apple filling

apples, peeled, cored, and diced
(Granny Smith recommended)

granulated sugar

brown sugar

ground cinnamon

lemon juice

cornstarch

Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment.
Mix flour, oats, sugar, baking powder, salt, and cut in butter until crumbly. Reserve 1 cup for topping.
Press remaining mixture into pan for crust. Bake 12-15 minutes until golden.
Mix apples with lemon juice, sugars, cinnamon, cornstarch, and optional vanilla and nutmeg. Spread over crust.
Sprinkle reserved crumble over apples. Bake 35-40 minutes until topping is golden and filling bubbles.
Cool at least 30 minutes, then lift out using parchment and cut into bars.
Notes
For best results, use firm, tart apples like Granny Smith.
