Cozy Apple Cinnamon Crumble Bars

Delight in these warm, cinnamon-spiced apple crumble bars with a buttery oat crust, perfect for cozy afternoons.

Ingredients

Crust and topping

  • 1 1/4 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed (use vegan butter for dairy-free)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Apple filling

  • 3 medium apples, peeled, cored, and diced (Granny Smith recommended)
  • 2 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • Optional vanilla extract (1/2 teaspoon optional)
  • Optional nutmeg (pinch)

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment.
  • Mix flour, oats, sugar, baking powder, salt, and cut in butter until crumbly. Reserve 1 cup for topping.
  • Press remaining mixture into pan for crust. Bake 12-15 minutes until golden.
  • Mix apples with lemon juice, sugars, cinnamon, cornstarch, and optional vanilla and nutmeg. Spread over crust.
  • Sprinkle reserved crumble over apples. Bake 35-40 minutes until topping is golden and filling bubbles.
  • Cool at least 30 minutes, then lift out using parchment and cut into bars.

Notes

For best results, use firm, tart apples like Granny Smith.
