Ingredients

Fruits

  • 3 medium Bosc or Anjou pears, peeled, cored, and sliced thin
  • 6 tablespoons unsalted butter (divided)
  • 3/4 cup packed brown sugar
  • 1/3 cup molasses
  • 1 3/4 cups all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 3/4 cup buttermilk (or dairy-free milk plus lemon juice)
  • 1 teaspoon vanilla extract

Optional toppings

  • handful chopped walnuts or pecans (optional)

Instructions 

  • Melt 4 tablespoons of butter in a 9-inch pan, stir in brown sugar, and cook until bubbling. Arrange pear slices over the caramel.
  • Whisk dry ingredients in a bowl. Beat remaining butter with molasses, add eggs, then stir in buttermilk and vanilla.
  • Combine wet and dry ingredients gently. Pour batter over pears and bake at 350°F (175°C) for 40-45 minutes.
  • Cool for 10 minutes, then invert onto a plate. Serve warm or at room temperature with optional toppings.

Notes

Ensure pears are sliced thin for even caramelization and presentation.
