A hearty and comforting one-pot dinner combining ground beef, rice, and cheese, baked to perfection for a quick and satisfying meal.

Ingredients

Meat and grains

  • 1 lb ground beef (lean or regular)
  • 1 cup long-grain white rice (brown rice optional)
  • 14 oz can diced tomatoes (undrained)
  • 2 ½ cups beef broth (low-sodium recommended)
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 tbsp olive oil

Vegetables and seasonings

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

  • 1 tbsp smoked paprika or chili flakes (optional)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook onion and garlic in olive oil until soft. Add ground beef, season, and brown. Stir in rice, tomatoes, and broth. Simmer 5 minutes.
  • Sprinkle cheese over the mixture. Transfer to oven and bake 20-25 minutes until rice is tender and cheese is bubbly.
  • Let rest 5 minutes before serving. Optional: add smoked paprika, chili flakes, or frozen peas for extra flavor.

Notes

For a creamier texture, stir in a splash of milk or cream before baking.
