Ingredients

Dough

  • 250 g whole milk, lukewarm
  • 50 g granulated sugar
  • 2.25 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 0.5 tsp kosher salt
  • 565 g all-purpose flour
  • 100 g unsalted butter, at room temperature

Filling

  • 850 g apples, peeled, cored, and diced small
  • 30 g unsalted butter
  • 80 g granulated sugar
  • 0.5 tsp ground cinnamon
  • 0.25 tsp kosher salt
  • 1 Tbsp corn starch
  • 125 g pecan halves, chopped (optional)

Frosting

  • 190 g unsalted butter, at room temperature
  • 280 g brown sugar
  • 2 Tbsp ground cinnamon
  • 0.125 tsp kosher salt
  • 115 g unsalted butter, at room temperature
  • 225 g cream cheese, at room temperature
  • 250 g powdered sugar, sifted
  • 1-2 Tbsp heavy whipping cream
  • 0.5 tsp kosher salt

Instructions 

  • Combine warm milk and sugar, sprinkle yeast, and let sit until frothy. Add eggs and salt, then mix in flour to form shaggy dough, knead until smooth.
  • Shape dough into a ball, place in greased bowl, cover, and let rise until doubled, about 1-1.5 hours.
  • Melt butter, cook apples with sugar, cinnamon, salt, and cornstarch until tender, then cool.
  • Roll out dough, spread with butter, sprinkle with sugar mixture, add apple filling, roll tightly, and slice into 12 pieces.
  • Place rolls in greased dish, let rise 30-45 minutes, then bake at 180°C (350°F) for 25-30 minutes until golden.
  • Beat butter and cream cheese, add powdered sugar and cream to make frosting, then spread over warm rolls.

Notes

Ensure dough is kneaded well for a soft texture and refrigerate frosting if not using immediately.
