These no-bake cranberry almond energy bites are a delicious and healthy snack, perfect for a quick energy boost anytime.

Ingredients

Dried Cranberries

  • 1 cup raw almonds
  • 1 cup dried cranberries
  • 1 cup old fashioned oats
  • 1/2 cup shredded coconut
  • 1/2 cup pure maple syrup or pitted medjool dates, chopped (Use dates for a sweeter flavor)
  • 1 teaspoon vanilla
  • pinch salt

Instructions 

  • Add all ingredients to a food processor and blend until crumbly and well mixed.
  • Chill the mixture in the refrigerator for 20 minutes.
  • Scoop 1 tablespoon portions and roll into 1-inch balls.
  • Roll the energy bites in shredded coconut or almond flour for a finished look.
  • Store in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.

Notes

For best results, use Medjool dates for natural sweetness and binding.
