Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 ¾ teaspoons baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • 1 large egg
  • ½ cup granulated sugar
  • 1/3 cup Greek yogurt
  • 2 tablespoons freshly squeezed orange juice
  • ¼ cup canola oil
  • 1 Tablespoon freshly grated orange zest

Cranberries

  • 1 ½ cups cranberries - fresh or frozen (reserve ¼ cup for topping)
  • 1–2 tablespoons flour to toss cranberries (for coating)

Streusel Topping

  • 1 ¼ cups flour
  • 1/3 cup granulated sugar
  • ½ teaspoon cinnamon (or more to taste)
  • ¼ cup unsalted butter - melted

Instructions 

  • Preheat oven to 400°F (200°C) and line muffin pan with liners.
  • Mix flour, sugar, and cinnamon for streusel, add melted butter, and chill.
  • Combine dry ingredients; whisk wet ingredients; fold into dry.
  • Toss cranberries with flour; fold into batter gently.
  • Spoon batter into tins, top with streusel and cranberries, bake at 375°F (190°C) for 18-20 mins.
