Enjoy these crunchy, flavorful biscotti packed with tart cranberries and roasted pistachios, perfect for dipping in coffee or tea.

Ingredients

Dough

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1 tsp pure vanilla extract
  • 1 tsp orange zest (optional)
  • 3/4 cup dried cranberries
  • 3/4 cup shelled pistachios (unsalted), roughly chopped

Instructions 

  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in a large bowl.
  • Combine wet and dry, then fold in cranberries and pistachios.
  • Shape dough into logs on a baking sheet and bake at 350°F (175°C) for 25-30 mins.
  • Cool, slice diagonally, then bake slices at 325°F (160°C) for 8-10 mins per side until crisp.
