A delicious no-knead bread packed with dried cranberries and walnuts, perfect for a cozy breakfast or snack.

Ingredients

Yeast and Dry Ingredients

  • 0.5 teaspoon active dry yeast
  • 1.5 cups warm water (110-115°F)
  • 1 teaspoon granulated sugar
  • 2 teaspoons Kosher salt
  • 3 cups bread flour, plus 2 tablespoons (plus more for surface)
  • 0.75 cup dried cranberries
  • 0.5 cup dried walnuts, roughly chopped
  • 1 tablespoon honey
  • 1 tablespoon orange zest

Instructions 

  • Dissolve yeast and sugar in warm water; let sit 10 minutes until foamy.
  • Mix flour and salt, then add yeast mixture, honey, cranberries, walnuts, and orange zest. Stir until combined and sticky.
  • Cover and let rest at room temperature for 18 hours.
  • Turn dough onto floured surface, fold gently into a ball, and transfer to floured parchment.
  • Preheat oven with Dutch oven inside to 450°F. Rest dough 30 minutes, then score and transfer into hot Dutch oven. Cover and bake 30 minutes, then uncover and bake 8-10 more minutes until golden.
  • Cool completely before slicing. Enjoy!

Notes

Use a well-floured surface to prevent sticking and handle the dough gently to keep the air bubbles intact.
