Yeast and Dry Ingredients
0.5teaspoonactive dry yeast
1.5cupswarm water (110-115°F)
1teaspoongranulated sugar
2teaspoonsKosher salt
3cupsbread flour, plus 2 tablespoons(plus more for surface)
0.75cupdried cranberries
0.5cupdried walnuts, roughly chopped
1tablespoonhoney
1tablespoonorange zest
Instructions
Dissolve yeast and sugar in warm water; let sit 10 minutes until foamy.
Mix flour and salt, then add yeast mixture, honey, cranberries, walnuts, and orange zest. Stir until combined and sticky.
Cover and let rest at room temperature for 18 hours.
Turn dough onto floured surface, fold gently into a ball, and transfer to floured parchment.
Preheat oven with Dutch oven inside to 450°F. Rest dough 30 minutes, then score and transfer into hot Dutch oven. Cover and bake 30 minutes, then uncover and bake 8-10 more minutes until golden.
Cool completely before slicing. Enjoy!
