Ingredients

Dough

  • 1 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 1 Tablespoon pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 12 ounces semi-sweet chocolate chips
  • 3/4 cup dried cranberries
  • 3/4 cup chopped walnuts

Instructions 

  • Preheat oven to 325°F (160°C). Prepare baking sheets with parchment paper or non-stick spray.
  • Cream together butter, sugars, until smooth. Add eggs and vanilla, mix well.
  • Mix dry ingredients, then combine with wet mixture. Fold in chocolate chips, cranberries, and walnuts.
  • Drop spoonfuls onto baking sheets, 1.5-2 inches apart. Bake for 12-17 minutes until golden.
  • Cool cookies on a rack. Enjoy!

Notes

For softer cookies, slightly underbake. Store in an airtight container.
