Instructions
Pat chicken dry, season with 1 tsp salt and black pepper.
Heat 2 tbsp olive oil, cook chicken 5-6 mins per side until golden. Transfer to a plate.
Add remaining oil, cook onion 3-5 mins until tender. Stir in tomatoes, garlic, red pepper, and salt; cook 1 min.
Add corn, cook 2-3 mins. Pour in cream, bring to boil, then simmer.
Return chicken, spoon sauce, cover, and cook 4-6 mins until internal temp reaches 165°F. Garnish with basil and Parmesan before serving.
Notes
Use fresh basil for the best flavor and adjust seasoning as needed.
