A flavorful and creamy chicken skillet packed with fresh basil, sweet corn, and cherry tomatoes, perfect for a quick and satisfying meal.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts (about 1.75 lb (800 g))
  • 1 tsp kosher salt (divided)
  • 0.25 tsp freshly ground black pepper
  • 0.25 cup extra-virgin olive oil (divided)
  • 1 medium sweet onion (thinly sliced)
  • 2 cups cherry tomatoes (halved)
  • 4 cloves garlic (minced)
  • 0.5 tsp crushed red pepper flakes
  • 3 cups corn kernels (about 1.1 lb (450 g))
  • 0.5 cup heavy cream
  • 0.5 cup fresh basil leaves (chopped)
  • 0.25 cup Parmesan cheese (finely grated)

Instructions 

  • Pat chicken dry, season with 1 tsp salt and black pepper.
  • Heat 2 tbsp olive oil, cook chicken 5-6 mins per side until golden. Transfer to a plate.
  • Add remaining oil, cook onion 3-5 mins until tender. Stir in tomatoes, garlic, red pepper, and salt; cook 1 min.
  • Add corn, cook 2-3 mins. Pour in cream, bring to boil, then simmer.
  • Return chicken, spoon sauce, cover, and cook 4-6 mins until internal temp reaches 165°F. Garnish with basil and Parmesan before serving.

Notes

Use fresh basil for the best flavor and adjust seasoning as needed.
