Ingredients

  • 2 fillets chicken (quick to cook and absorb the cajun seasoning well.)
  • 1 tablespoon olive oil (adds a mild flavor and helps sear the chicken evenly.)
  • 1 tablespoon cajun seasoning (key to the dish’s bold flavor.)
  • 12 oz pasta (penne, fettuccine, or spaghetti.)
  • 2 tablespoons unsalted butter (forms the base of the creamy sauce.)
  • 1 cup heavy cream (makes the sauce velvety and rich.)
  • ½ cup chicken broth (adds a savory base to the sauce.)
  • ¼ cup grated parmesan cheese (adds a salty, umami depth to the sauce.)

Instructions 

  • Season chicken with salt, pepper, and Cajun seasoning. Sear in olive oil until cooked through.
  • Cook pasta in salted water until al dente, then reserve some pasta water before draining.
  • Melt butter in the skillet, sauté garlic, then add Cajun seasoning and smoked paprika.
  • Stir in heavy cream and chicken broth, simmer until thickened, then add parmesan cheese.
  • Toss cooked pasta and sliced chicken in the sauce, adding reserved pasta water as needed.
  • Garnish with parsley and serve with a squeeze of lemon juice.

Notes

For a seafood twist, substitute chicken with shrimp.
