Ingredients

Pasta

  • 8 oz pasta (fettuccine or penne)

Olive Oil

  • 2 tablespoons olive oil

Chicken

  • 1 pound chicken breast, diced

Mushrooms

  • 8 oz mushrooms, sliced (button or cremini)

Garlic

  • 3 cloves garlic, minced

Heavy Cream

  • 1 cup heavy cream

Chicken Broth

  • 1 cup chicken broth

Parmesan Cheese

  • 1 cup grated Parmesan cheese

Salt and Pepper

  • Salt and pepper to taste

Parsley

  • Fresh parsley for garnish fresh parsley (for garnish)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain.
  • Sauté diced chicken in olive oil until golden, then remove from pan.
  • Sauté mushrooms until tender, add garlic, cook for 1 minute.
  • Add chicken broth and heavy cream, simmer 5 minutes, then stir in Parmesan.
  • Combine cooked chicken and pasta, toss in sauce, garnish with parsley, and serve.

Notes

For a lighter version, use half and half instead of heavy cream.
