Ingredients

Oil and Seasonings

  • 1 tablespoon oil (or butter)
  • 1 pound boneless and skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 diced or sliced onion
  • 8 ounces mushrooms, quartered or sliced
  • 2 cloves garlic, chopped
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon paprika
  • 1 cup chicken broth (or substitute beef broth or water)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons dried dill (optional)
  • 1/2 cup sour cream

Salt and pepper to taste

Instructions 

  • Heat oil in a skillet, cook chicken until browned, then set aside.
  • Sauté onions and mushrooms until tender.
  • Add garlic, thyme, and paprika; cook until fragrant. Pour in broth, mustard, Worcestershire, and soy sauce. Return chicken and simmer until sauce thickens.
  • Turn off heat, stir in sour cream and dill, season with salt and pepper.

Notes

Serve with rice or noodles for a complete meal.
