Ingredients

Protein

  • 8 ounces boneless, skinless chicken thighs (cut into 1-inch chunks)

Seasonings

  • to taste Kosher salt and freshly ground black pepper

Oils and Fats

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter

Vegetables

  • 8 ounces cremini mushrooms (thinly sliced)
  • 1 piece onion (diced)
  • 3 pieces carrots (peeled and diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)

Herbs and Spices

  • 1/2 teaspoon dried thyme

Thickening and Broth

  • 1/4 cup all-purpose flour
  • 4 cups chicken stock
  • 1 bay leaf bay leaf
  • 1/2 cup half and half (or more, as needed*)

Garnish

  • 2 tablespoons chopped fresh parsley leaves

Instructions 

  • Season chicken with salt and pepper.
  • Cook chicken in olive oil until golden, then set aside.
  • Sauté mushrooms, onion, carrots, and celery in butter until tender.
  • Add garlic and thyme; cook 1 minute.
  • Whisk in flour, then add chicken stock, bay leaf, and chicken; cook until slightly thickened.
  • Stir in half and half, season, and serve garnished with parsley.

Notes

Adjust the amount of half and half for desired creaminess.
