Instructions
Melt butter in a pot, cook carrots, celery, and onion for 5 minutes.
Add mushrooms and garlic; cook until tender, about 4-5 minutes.
Stir in flour, then gradually add broth, thyme, and chicken; simmer until thickened, about 15 minutes.
Remove from heat, stir in heavy cream, salt, and pepper.
Ladle into bowls and garnish with thyme sprigs if desired.
Notes
For a richer flavor, sauté vegetables until golden before adding liquids.
