Ingredients

Butter

  • 2 tablespoons unsalted butter

Vegetables

  • 1 cup peeled and chopped carrots ((¼ inch pieces))
  • ½ cup sliced celery
  • 1.5 cups chopped yellow onion

Mushrooms

  • 8 ounces fresh baby bella mushrooms, sliced

Garlic

  • 2 teaspoons minced fresh garlic

Flour

  • ¼ cup all-purpose flour

Broth

  • 4 cups low sodium chicken broth

Herbs & Seasonings

  • ½ teaspoon dried thyme

Chicken

  • 3 cups fully cooked shredded chicken

Cream

  • ¾ cup heavy cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Garnish

  • Fresh thyme sprigs (optional garnish)

Instructions 

  • Melt butter in a pot, cook carrots, celery, and onion for 5 minutes.
  • Add mushrooms and garlic; cook until tender, about 4-5 minutes.
  • Stir in flour, then gradually add broth, thyme, and chicken; simmer until thickened, about 15 minutes.
  • Remove from heat, stir in heavy cream, salt, and pepper.
  • Ladle into bowls and garnish with thyme sprigs if desired.

Notes

For a richer flavor, sauté vegetables until golden before adding liquids.
