Ingredients

Base ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 1 medium carrot, diced
  • 2 cloves garlic, minced
  • 6 ounces mushrooms, sliced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1/4 cup dry orzo pasta
  • 3 cups cooked shredded chicken
  • 3/4 cup heavy cream

Seasonings

  • Kosher salt
  • Black pepper
  • Fresh parsley

Instructions 

  • Cook onion, celery, and carrot in oil and butter until softened.
  • Add garlic, mushrooms, herbs, salt, and pepper; cook until mushrooms are tender.
  • Stir in flour, then gradually add broth and simmer with orzo until tender.
  • Mix in shredded chicken and heavy cream; heat through and serve garnished with parsley.

Notes
