A delicious and creamy pasta dish featuring tender chicken, fresh spinach, and a zesty lemon-herb sauce, perfect for a satisfying meal.

Ingredients

Pasta

  • 8-10 ounces uncooked pasta
  • 2 pieces chicken breasts (cut into small bite-size pieces)
  • 1½-2 teaspoons lemon pepper seasoning or salt pepper
  • 1 small leek (chopped)
  • 2 green onions green onions (ends trimmed and sliced)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • cup chicken broth
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon Dijon mustard
  • 1-¼ cups heavy cream
  • 4 cups fresh baby spinach
  • ½ cup freshly grated mizithra or parmesan cheese
  • ¼ cup fresh herbs (minced blend of parsley and dill)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • Season chicken with lemon pepper and cook in a skillet until golden, then remove and set aside.
  • In the same pan, melt butter and cook leeks, garlic, and green onions until softened.
  • Add chicken broth, lemon juice, lemon zest, and Dijon mustard; simmer briefly. Stir in spinach until wilted, then add chicken and cream; cook for 2-3 minutes.
  • Combine pasta with sauce, herbs, and cheese; toss to coat. Serve hot garnished with additional herbs or lemon zest.

Notes

Feel free to adjust seasoning and cheese to taste for a personalized touch.
