A delicious, creamy chicken salad packed with mushrooms, walnuts, and eggs, perfect for a healthy and satisfying meal.

Ingredients

Eggs

  • 3 pieces hard-boiled eggs (diced)
  • 1.5-2 tablespoons olive oil
  • 1 medium onion (finely diced)
  • 110 g walnuts (chopped (4 oz.))
  • 1/3 cup mayonnaise
  • 250 g cooked chicken (shredded or diced into cubes (8-9 oz.))
  • 160-200 g marinated mushrooms (sliced (6-7 oz.))
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon Dijon or yellow mustard
  • 1 clove garlic (crushed or minced (optional))
  • 1 spring onion chopped for garnish (optional)

Instructions 

  • Boil eggs for 8-9 minutes, then peel and dice.
  • Sauté diced onion in olive oil until soft and golden, about 4-5 minutes.
  • Shred or dice chicken and eggs, slice mushrooms, and chop walnuts.
  • Mix all ingredients with sautéed onions, salt, pepper, mayonnaise, mustard, and optional garlic. Garnish with chopped spring onion and walnuts. Serve on lettuce leaves.
