Instructions
Heat olive oil in a large pot, cook chicken until browned, then set aside.
Sauté onion and garlic until translucent and fragrant.
Add mushrooms and cook until golden, then pour in broth and season with herbs, simmer.
Return chicken to the pot, simmer for 10-15 minutes, then stir in coconut milk and heat through.
