Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast or thighs, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 ounces cremini or white mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup coconut milk or dairy-free cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Instructions 

  • Heat olive oil in a large pot, cook chicken until browned, then set aside.
  • Sauté onion and garlic until translucent and fragrant.
  • Add mushrooms and cook until golden, then pour in broth and season with herbs, simmer.
  • Return chicken to the pot, simmer for 10-15 minutes, then stir in coconut milk and heat through.
  • Serve hot, garnished with parsley. Enjoy!

Notes
