A rich and comforting soup combining tender chicken, earthy mushrooms, and a creamy broth, perfect for cozy days.

Ingredients

Protein

  • 16 ounces boneless, skinless chicken breasts (cubed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup unsalted butter (divided)
  • 1 small onion (diced)
  • 2 carrots sliced carrots
  • 2 celery ribs sliced celery
  • 8 ounces button mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon thyme
  • 1/4 cup all-purpose flour
  • 32 ounces chicken broth
  • 8 ounces half & half
  • 1 tablespoon fresh parsley (chopped)

Instructions 

  • Season chicken with salt and pepper. Brown in butter, then remove.
  • Sauté vegetables in remaining butter until tender and browned.
  • Add garlic and thyme; cook briefly.
  • Stir in flour, then add broth and half & half. Simmer until thickened.
  • Return chicken to pot, heat through, then serve topped with parsley.

Notes

For a creamier texture, blend a portion of the soup before serving.
