A comforting and flavorful dish combining tender chicken, roasted butternut squash, and fresh spinach in a creamy sauce served over orzo.

Ingredients

Vegetables

  • 12 oz oz butternut squash (peeled, seeded, and cubed)
  • 1 tablespoon tablespoon olive oil
  • salt and pepper salt and pepper (to taste)
  • 2 tablespoons tablespoons fresh thyme

Chicken

  • 1.5 lb lb chicken thighs (skinless, boneless)
  • 1 teaspoon teaspoon smoked paprika
  • 1 teaspoon teaspoon Italian seasoning
  • salt and freshly ground black pepper salt and pepper (to taste)

Pasta

  • 1 cup cup orzo (uncooked)
  • 5 cloves cloves garlic (minced)

Liquids and Greens

  • 2 cups cups chicken stock
  • 5 oz oz spinach (fresh)
  • 1/2 cup cup heavy cream
  • salt and pepper salt and pepper (to taste)

Additional

  • 1 tablespoon tablespoon olive oil
  • fresh thyme fresh thyme

Instructions 

  • Roast the butternut squash with olive oil, salt, pepper, and thyme until tender.
  • Cook the chicken thighs with smoked paprika, Italian seasoning, salt, and pepper until browned and cooked through.
  • Cook the orzo in chicken stock until al dente, then stir in garlic, spinach, and heavy cream.
  • Combine the roasted squash, cooked chicken, and orzo mixture. Garnish with fresh thyme and serve.

Notes

For extra flavor, sprinkle with grated Parmesan before serving.
