Instructions
Roast the butternut squash with olive oil, salt, pepper, and thyme until tender.
Cook the chicken thighs with smoked paprika, Italian seasoning, salt, and pepper until browned and cooked through.
Cook the orzo in chicken stock until al dente, then stir in garlic, spinach, and heavy cream.
Combine the roasted squash, cooked chicken, and orzo mixture. Garnish with fresh thyme and serve.
Notes
For extra flavor, sprinkle with grated Parmesan before serving.
