Instructions
Heat olive oil in a large skillet over medium heat. Cook chicken until browned and cooked through, then remove and set aside.
In the same skillet, sauté chopped onion and minced garlic until fragrant and translucent.
Add chicken broth and bring to a boil. Stir in orzo and cook until tender, about 8 minutes.
Return cooked chicken to the skillet, add heavy cream and spinach, and cook until spinach wilts and sauce thickens, about 3-5 minutes.
Season with salt and pepper to taste. Serve hot, topped with Parmesan cheese.
Notes
For a lighter version, use half-and-half instead of heavy cream.
