Instructions
Cook pasta in salted boiling water until al dente, then drain and rinse with cold water. Shake off excess water.
Whisk together mayonnaise, Greek yogurt, lemon juice, olive oil, Dijon mustard, garlic, basil, parsley, salt, and pepper to make the dressing.
Combine cooked pasta, chicken, tomatoes, bell pepper, onion, arugula, and parmesan in a large bowl. Toss with dressing.
Adjust seasoning with additional salt, pepper, or olive oil if needed. Serve immediately or refrigerate up to 5 days.
Notes
For extra flavor, add fresh herbs or a squeeze of lemon before serving.
