Ingredients

Wild Rice

  • 2 cups wild rice (uncooked)
  • 1/4 teaspoon salt
  • 1/8 teaspoon salt

Vegetables and Chicken

  • 1 tablespoon olive oil
  • 5 cloves garlic (minced)
  • 2 carrots carrots (peeled, finely grated)
  • 1 pound chicken breast (chopped into small chunks)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup green peas (frozen)
  • 1 cup half and half
  • 1/3 cup chicken broth
  • 1/2 cup Parmesan cheese (shredded)

Seasoning

  • to taste salt

Instructions 

  • Cook wild rice with 1/4 and 1/8 teaspoon salt in boiling water for about 45 minutes.
  • Heat olive oil in a skillet, add garlic and carrots, cook for 1 minute.
  • Add chicken, season with salt and pepper, cook for 5 minutes until done.
  • Stir in green peas, then add cooked wild rice to the skillet.
  • Pour in half and half and chicken broth, bring to a boil, then add Parmesan cheese and stir until melted. Adjust salt as needed.

Notes

For extra flavor, consider adding herbs like thyme or parsley.
