Instructions
Cook pasta in salted water until al dente.
Season chicken, dredge lightly in flour, then cook in butter and oil until golden. Remove and set aside.
Add garlic, broth, lemon juice, Dijon, and seasoning; simmer briefly.
Return chicken to pan, add cream and spinach; cook until chicken is done and spinach wilts.
Toss with cooked pasta, stir in Parmesan, and season to taste.
Notes
