Instructions
Sauté onions, peppers, and garlic in butter for 6 minutes.
Add remaining ingredients except cheeses; simmer until chicken is cooked, then shred and return to soup.
Reduce heat, then stir in shredded cheddar and cream cheese until smooth.
Taste and adjust seasonings; serve with tortillas.
Notes
For extra flavor, add fresh cilantro or lime juice before serving.
