A rich and comforting dish featuring tender chicken cutlets in a creamy mushroom sauce, perfect for a cozy dinner.

Ingredients

Protein

  • 4 pieces thin-sliced chicken cutlets from 2 breasts
  • ½ - 1 tablespoon olive oil (for cooking)
  • ½ teaspoon divided garlic powder
  • salt and pepper generous pinches salt and pepper
  • 1 small yellow onion (finely diced)
  • 1 pound baby bella mushrooms (cleaned and sliced)
  • 1 clove garlic (minced)
  • ¾-1 cup chicken broth
  • 2 tablespoons all-purpose flour
  • ¼-½ cup half and half (to taste (don't use reduced fat))
  • ¼ teaspoon dried thyme dried thyme

Herbs for serving

  • fresh sprigs of thyme or diced fresh parsley leaves for serving fresh herbs

Instructions 

  • Preheat a skillet, cook chicken with seasonings until golden, then set aside.
  • Sauté onion, add mushrooms and garlic, cook until mushrooms sweat.
  • Whisk together chicken broth and flour, then add to the skillet with half and half and thyme.
  • Return chicken to the pan, simmer until cooked through and sauce thickens, then serve garnished with herbs.

Notes

Use fresh herbs for the best flavor and adjust the cream and broth to your preferred sauce consistency.
