A quick and creamy baked chicken dish featuring cottage cheese and mozzarella, perfect for a satisfying meal in half an hour.

Ingredients

Protein

  • 2.5 cups Cooked chicken, shredded (Rotisserie is perfect)

Dairy

  • 1.5 cups Cottage cheese (Full fat/4% works best)
  • 1 cup Shredded mozzarella cheese

Broth & Thickening

  • 1/3 cup Chicken broth
  • 1 tablespoon Cornstarch (this binds the sauce so it stays creamy)

Spices

  • 1 tsp Garlic powder
  • 0.5 tsp Onion powder
  • to taste NA Salt and black pepper

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9×9 baking dish.
  • Whisk cottage cheese, broth, cornstarch, garlic, onion, salt, and pepper until smooth.
  • Toss shredded chicken with the sauce until well coated.
  • Spread mixture into the dish, top with mozzarella, and bake for 30 minutes.
  • Let sit for 5–10 minutes before serving.

Notes

For extra flavor, add herbs or spices as desired.
