A delicious and creamy one-pan dish featuring tender chicken and vibrant broccoli, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 2 pounds chicken fillets

Seasonings

  • kosher salt (to taste)
  • freshly cracked black pepper (to taste)
  • 1/2 teaspoon paprika
  • 4 tablespoons butter (divided for cooking)

Vegetables

  • 4 to 5 cloves garlic (minced)
  • 10.5 ounces condensed cream of chicken soup ((1 can), or more if needed)
  • 1 cup water
  • 2 to 3 cups broccoli (chopped)
  • 1 teaspoon fresh parsley (chopped)

Garnish

  • lemon wedges (for serving (optional))

Instructions 

  • Season chicken with salt, pepper, and paprika; set aside.
  • Melt 2 tablespoons butter in a skillet over medium-high heat; cook chicken for 5 minutes per side until browned. Transfer to a plate and keep warm.
  • Melt remaining butter in the same skillet, sauté garlic until fragrant, then whisk in soup and water until hot and bubbling. Reduce heat to low.
  • Return chicken and add broccoli; cover and simmer for 10 minutes until chicken is cooked through.
  • Serve warm over rice or pasta, garnished with parsley and lemon wedges if desired.

Notes

For firmer broccoli, add it later in the cooking process.
