Ingredients

Protein

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions 

  • Season chicken with salt, pepper, and paprika. Sear in hot oil until golden and cooked through. Remove and set aside.
  • Melt butter in the same skillet, sauté garlic for 30 seconds. Add chicken broth, scraping browned bits. Stir in cream, onion powder, and Italian seasoning; simmer 3-4 minutes.
  • Stir in Parmesan cheese, then add spinach; cook until wilted, about 2-3 minutes. Return chicken to skillet and simmer 3-4 minutes to absorb flavors.
  • Serve immediately with your choice of side. Enjoy!

Notes

For a lighter version, use half-and-half instead of heavy cream.
