Creamy Garlic Chicken with Spinach Penne Pasta

A delicious and creamy chicken pasta dish packed with garlic, spinach, and Parmesan, perfect for a satisfying meal.

Ingredients

Protein

  • 500 g boneless and skinless chicken breast, raw, sliced into small strips
  • 6 cloves garlic, minced
  • 250 g uncooked penne pasta
  • 1 cup chicken stock
  • 250 ml semi-skimmed milk
  • 100 g light cream cheese
  • 1 tablespoon cornstarch (can also use arrowroot or tapioca starch)
  • 300 g fresh spinach
  • 30 g parmesan

Seasoning & Oil

  • salt and black pepper
  • olive oil spray

Instructions 

  • Heat a deep frying pan with olive oil spray, season chicken with salt and pepper, sear until golden, then set aside.
  • Add more olive oil, fry minced garlic for a few minutes, then add 1/2 cup of stock and reduce until softened.
  • Cook pasta in salted boiling water until al dente, reserve 80ml of pasta water, then drain.
  • Combine remaining stock, milk, and cream cheese, simmer until melted, then add cornstarch slurry and cook until thickened. Add spinach and chicken, cook until spinach wilts and chicken is cooked through.
  • Mix in cooked pasta, reserved pasta water, and Parmesan, stir until cheese melts. Season with salt and pepper, then serve.

Notes

For a creamier sauce, add a splash more milk or cheese as desired.
