Ingredients

Pasta

  • 8 oz Whole Wheat Pasta
  • 1 lb Lean Ground Beef
  • 1 cup Cottage Cheese
  • 1 cup Greek Yogurt
  • 1 cup Low-Sodium Beef Broth
  • 1 cup Spinach (fresh or frozen)
  • 1 cup Cherry Tomatoes (halved)
  • 1 Medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 tsp Italian Seasoning
  • 1 tsp Paprika
  • to taste Salt and Pepper
  • for cooking Olive Oil
  • optional Grated Parmesan Cheese (for serving)

Instructions 

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil and sauté diced onion and minced garlic until fragrant.
  • Add ground beef and cook until browned. Stir in Italian seasoning, paprika, salt, and pepper.
  • Pour in beef broth, then add cottage cheese, Greek yogurt, spinach, and cherry tomatoes. Simmer until heated through.
  • Combine cooked pasta with the sauce. Serve with grated Parmesan if desired.

Notes

For a creamier texture, stir in extra Greek yogurt or cottage cheese before serving.
