A flavorful and creamy chicken dish infused with lemon and fresh basil, perfect for a quick and elegant meal.

Ingredients

Chicken

  • 1 pound chicken cutlets (4 cutlets)
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground pepper
  • 2 tablespoons unsalted butter (divided)
  • 2 teaspoons minced garlic
  • 1.25 cups unsalted chicken broth
  • 3 ounces reduced-fat cream cheese (cut into pieces)
  • 1 small lemon (thinly sliced and seeds removed)
  • 2 tablespoons chopped fresh basil (plus more for garnish)

Instructions 

  • Sprinkle chicken with salt and pepper. Cook in 1 tablespoon butter until browned, about 3 minutes per side. Transfer to a plate.
  • Add remaining butter and garlic to the pan; cook until fragrant, about 1 minute. Add broth and bring to a boil.
  • Add cream cheese; stir until melted and thickened, about 5 minutes. Stir in lemon slices and basil.
  • Return chicken to the pan; simmer until sauce thickens and coats the chicken, about 4 minutes.

Notes

For extra flavor, garnish with additional basil before serving.
