Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 medium shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions 

  • Season chicken with salt and pepper.
  • Heat oil in skillet; cook chicken until browned and cooked through, 6-8 mins per side. Keep warm.
  • Sauté shallot until softened, 1 min; add garlic and cook 30 sec.
  • Sprinkle flour, cook 1 min; whisk in broth, simmer 2 mins until thickened.
  • Stir in cream, dill, lemon juice, lemon zest; return chicken and heat through 2 mins.

Notes

Use fresh dill for best flavor and serve with rice or vegetables.
