Instructions
Pound chicken to even thickness and season with Old Bay, salt, pepper, and onion powder.
Heat 1 tbsp oil in a skillet, sear chicken 5-6 mins per side, then set aside.
Deglaze skillet with half the broth, add mushrooms, cook 3-4 mins, then add garlic and lemon pepper, cook 1-2 mins.
Add coconut milk, remaining broth, honey, and mustard, stir to combine, then lower heat and add Parmesan, cook 1-2 mins.
Return chicken to skillet, nestle into sauce, turn to coat, then turn off heat. Garnish with Parmesan or parsley and serve.
Notes
Use fresh parsley for best flavor and consider adding more Parmesan for extra richness.
