Creamy Mustard Chicken Breast with Mushrooms

A flavorful and creamy chicken dish featuring mushrooms, Dijon mustard, and coconut milk, perfect for a comforting meal.

Ingredients

Protein

  • 1.5 lbs chicken breast (or 4 medium)
  • 2 tbsp avocado oil (divided)
  • 1 tbsp old bay seasoning
  • 1 tbsp onion powder
  • Salt and pepper to taste Salt and pepper (about 1 tsp salt and 1/4 tsp pepper)
  • 0.5 cup low sodium chicken broth (or vegetable broth)
  • 4 cloves garlic (minced)
  • 1 cup coconut milk (Thai coconut milk, not the milk you drink off a carton)
  • 1 lb Cremini mushroom
  • 2 tbsp Dijon Mustard
  • 1 tbsp honey (optional, if using honey Dijon)
  • 1 tbsp lemon pepper
  • 0.5 cup grated Parmesan cheese

Garnish

  • Fresh parsley (to garnish)
  • Optional more grated Parmesan (for garnish)

Instructions 

  • Pound chicken to even thickness and season with Old Bay, salt, pepper, and onion powder.
  • Heat 1 tbsp oil in a skillet, sear chicken 5-6 mins per side, then set aside.
  • Deglaze skillet with half the broth, add mushrooms, cook 3-4 mins, then add garlic and lemon pepper, cook 1-2 mins.
  • Add coconut milk, remaining broth, honey, and mustard, stir to combine, then lower heat and add Parmesan, cook 1-2 mins.
  • Return chicken to skillet, nestle into sauce, turn to coat, then turn off heat. Garnish with Parmesan or parsley and serve.

Notes

Use fresh parsley for best flavor and consider adding more Parmesan for extra richness.
