A comforting and easy one-pot meal featuring tender chicken, orzo pasta, and a creamy sauce, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces

Pasta

  • 1 cup orzo pasta

Broth

  • 4 cups chicken broth, low sodium preferred

Cream

  • 1/2 cup heavy cream (or substitute half-and-half or cream cheese)

Oil

  • 2 tablespoons olive oil

Aromatics

  • 3 cloves garlic, minced
  • 1 medium yellow onion, finely chopped

Cheese

  • 1/2 cup grated Parmesan cheese

Herbs & Seasonings

  • 1 teaspoon dried oregano or thyme
  • to taste Salt and black pepper

Optional Greens & Zest

  • 1 cup baby spinach (optional)
  • 1 teaspoon lemon zest (optional)
  • pinch red pepper flakes pinch of red pepper flakes (optional)

Instructions 

  • Pat chicken dry, season with salt, pepper, and oregano. Sear until browned, then set aside.
  • Sauté onion and garlic until fragrant, then add chicken and cook until mostly done.
  • Add orzo and pour in broth; simmer covered until orzo is tender and liquid absorbed.
  • Stir in cream and Parmesan, then add spinach and lemon zest if using; cook until spinach wilts.
  • Adjust seasoning, sprinkle parsley, and let sit for 2 minutes before serving.

Notes

For a lighter version, use half-and-half instead of heavy cream or skip the cheese.
