Instructions
Pat chicken dry, season with salt, pepper, and oregano. Sear until browned, then set aside.
Sauté onion and garlic until fragrant, then add chicken and cook until mostly done.
Add orzo and pour in broth; simmer covered until orzo is tender and liquid absorbed.
Stir in cream and Parmesan, then add spinach and lemon zest if using; cook until spinach wilts.
Adjust seasoning, sprinkle parsley, and let sit for 2 minutes before serving.
Notes
For a lighter version, use half-and-half instead of heavy cream or skip the cheese.
