Ingredients

Pasta

  • 8 oz elbow macaroni or shells
  • 2 cups vegetable or chicken broth
  • 1 cup whole milk
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 cups shredded cheese (sharp cheddar and Gruyère)
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground nutmeg
  • to taste Salt and black pepper
  • a pinch cayenne pepper (optional) (for heat lovers)

Instructions 

  • Combine pasta, broth, milk, and pumpkin in a large pot and bring to a boil, stirring frequently.
  • Reduce heat and simmer until pasta is tender and liquid thickens, about 8-10 minutes.
  • Remove from heat and stir in butter until melted.
  • Add cheese, garlic powder, nutmeg, salt, and pepper; stir until smooth and cheese melts.
  • Adjust seasonings, add cayenne if desired, and let stand a few minutes before serving.

Notes

For extra flavor, use a mix of sharp cheddar and Gruyère cheese.
