Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon lemon zest
  • 3 tablespoons freshly squeezed lemon juice
  • 0.75 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (plus extra for garnish)
  • 0.5 teaspoon crushed red pepper flakes

Instructions 

  • Pat chicken dry, season with salt and black pepper, then dredge in flour.
  • Heat oil and butter, sear chicken 4-5 minutes per side until golden, then set aside.
  • Sauté garlic in the same skillet 1 minute, then add chicken broth and simmer 2 minutes.
  • Stir in cream, lemon zest, lemon juice, and Parmesan; simmer 2-3 minutes until thickened.
  • Return chicken to skillet, spoon sauce over, and cook 3-4 minutes. Garnish with parsley and red pepper flakes.

Notes

Serve immediately with extra Parmesan and parsley for garnish.
