Instructions
Cook noodles in boiling salted water until tender, then drain and rinse with cold water.
Whisk peanut butter, chili sauce, soy sauce, sriracha, lime zest, lime juice, salt, and warm water until smooth.
Cook chicken in oil until lightly golden, add peppers, garlic, scallions, and ginger; cook until tender.
Add noodles to skillet, toss with sauce, then serve topped with herbs, peanuts, and lime wedges.
