A flavorful and creamy chicken noodle dish with fresh herbs, peanuts, and a tangy lime sauce, perfect for a quick and satisfying meal.

Ingredients

Seasonings

  • 1 tsp Kosher salt
  • 1/2 tsp finely grated lime zest
  • 1/4 tsp salt (for sauce)

Noodles and Sauces

  • 8 oz thick rice noodles
  • 1/2 cup no-sugar-added creamy peanut butter
  • 3 tbsp sweet chili sauce
  • 2 tbsp tamari or reduced-sodium soy sauce
  • 1 tbsp sriracha
  • 1/2 tsp finely grated lime zest
  • 2 tbsp fresh lime juice
  • 2 tbsp vegetable or canola oil

Chicken and Vegetables

  • 2 small boneless, skinless chicken breasts (about 8 oz.) (chopped into 1/2" pieces)
  • 1 small red bell pepper (seeds and ribs removed, thinly sliced)
  • 3 cloves garlic (thinly sliced)
  • 3 scallions white and green parts separated, thinly sliced
  • 2 tbsp finely chopped peeled ginger
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup small fresh basil leaves
  • 1/3 cup roasted, salted peanuts (finely chopped)

For Serving

  • to taste Lime wedges (for serving)

Instructions 

  • Cook noodles in boiling salted water until tender, then drain and rinse with cold water.
  • Whisk peanut butter, chili sauce, soy sauce, sriracha, lime zest, lime juice, salt, and warm water until smooth.
  • Cook chicken in oil until lightly golden, add peppers, garlic, scallions, and ginger; cook until tender.
  • Add noodles to skillet, toss with sauce, then serve topped with herbs, peanuts, and lime wedges.

Notes

Adjust spice levels and herbs to taste for best flavor.
