A delicious and creamy pasta dish featuring tender chicken, basil pesto, and Parmesan, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 14 oz boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 12 oz penne pasta
  • 7 fl oz heavy cream
  • 1.4 oz grated Parmesan cheese
  • 2.8 oz basil pesto (store-bought or homemade)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • to taste Salt and freshly ground black pepper
  • as needed Fresh basil leaves
  • as needed Additional grated Parmesan cheese

Instructions 

  • Cook penne in salted water until al dente; drain and reserve 3.5 fl oz (103 ml) of pasta water.
  • Cook chicken in olive oil until golden and cooked through; remove and set aside.
  • Sauté onion and garlic in the same skillet until softened; add cream, pesto, and Parmesan, simmering until smooth.
  • Return chicken to skillet, then add cooked pasta and reserved pasta water to adjust sauce consistency; toss to combine.
  • Season with salt and pepper, garnish with basil and extra Parmesan, then serve immediately.

Notes

For extra flavor, sprinkle with additional Parmesan and fresh basil before serving.
